Re-Covering Furniture

   Okay, so I have to give a little background to this... Layton and I bought our kitchen table at a yard sale right before we got married.  It was a total God send, because we didn't have a kitchen table yet and the man who was having the sale was just trying to get rid of everything, so we got it for a very good price.  It needed some good cleaning up, so before our wedding I wiped it down good.  Well, we both liked the table a lot and it is very good quality, but I just couldn't get over the fabric on them...

   And I will let you know... that it isn't very hard to re-cover chairs like this!  Tackle your fears and get after it.  ;)  I will even help you if you like.  All you need is a screwdriver, large stapler, and fabric.  :)

Grilled Enchiladas



So, Layton and I experimented again!  I know, dangerous.  :)  I was going to make chicken enchiladas for dinner the other night, but since I have been running a fever off and on I did not want to start the oven.  So, Layton was going to grill the chicken and since the grill was already going I decide we would grill the enchiladas.  It was so very good.  I will share this recipe below, but I warn you... it is very spicy.  You could change things up a bit though if you wanted to make it less spicy or just take the concept and use your own enchilada recipe.
This is the sauce.  I warmed it on the stove.  The easiest sauce ever...!
I love simple recipes.  :)

-Grilled Chicken Enchiladas-

8 flour tortillas
3 cups chopped cooked chicken
2 cups monterey cheese
1 cup green chilies
1/2 cup sour cream
8 oz. sour cream
8 oz. green taco sauce

Stir together chicken, cheese, green chilies, and 1/2 cup sour cream.  Roll into tortillas and then secure them with toothpicks.  Grill on both sides until browned, but try not to burn!  If not quite warm keep in top rack of grill for a few minutes to warm through.

Combine 8 oz. of sour cream and green taco sauce and warm in a small sauce pan.  Serve with sauce over grilled enchiladas and enjoy!

-Great with black beans, rice and sweet tea!

~Family Vacation~

   So, I have had a lot of people asking me about family vacation... how it went, what we did, where we went.  So here goes, I will give you the speed version with pictures, about family vacation.  Buckle down and get ready, it might be a bumpy ride...

Mom and Stephanie both took her out a lot of feed the ducks and she would always be smiling and laughing and talking away.  She would also eat right along with the ducks.  ;)
Isn't she so cute.  She looks a lot like Mom I think.

This was one of my favorite parts of the trip.
We went hiking on a trail that went up a "mountain" to a look out post of PK lake.
It was really pretty and we had a lot of fun.

I think she was really cold.  They had to leave soon after to get her back to the cabin.

This was at the TOP!  Joseph was not only good with his camera, but he was good at setting it up to take pictures, so we also have the pleasure of remembering Joe on this trip.

We played partners since there were 10 of us.
I really enjoyed it.  Made the game even more interesting.
We did a ton of different combinations, but I think my favorite was married people together and then Stephanie and Joe.  It was interesting and fun watching how partners interacted.

It was really great fun and we are all hoping to do it again soon.
In my opinion, not a bad Christmas present.
